Kaima Idli
Method:
1.Cut the idli's into small cubes and deep fry them in oil till it becomes dark golden brown , keep aside.Kaima Idli2.Heat oil in a pan -   add the items under 'to temper' and allow it to splutter. Then add onions, ginger garlic paste and saute till onions turn light brown. Then add tomato puree along with red chilli, coriander and garam masala powders.Add required salt and mix well.Kaima Idli3.Cook till raw smell of tomatoes leave. Meanwhile pressure cook peas for 2 whistles and add peas and capsicum together to the dry gravy.Kaima Idli4.Give a quick stir, add 1/2 cup water and allow the gravy to boil for 3mins in sim.Kaima Idli5.Finally add the deep fried idlis and toss it well.Dont mash it just turn over so that the masalas coat on all sides of the idlies. Finally garnish with coriander leaves, switch off and add lemon juice.
Kaima IdliServe hot with wedges of lemon and onion raita - the best combo!Kaima Idli
My Notes:
  • Always use a days leftover idlis and keep them refrigerated (preferably overnight or atleast for 3 hrs) so that it drinks less oil and doesnt stick to each other. For any deep fry if you refrigerate for sometime, it will sure drink less oil.
  • This is a spicy version , but when accompanied with onion raita it balances well.
  • The gravy should be semi runny while adding the fried idlis so that it coats well and also the idlis absorbs the masalas.
  • Adding peas is purely optional but I saw it in the restaurant so added it.
  • You can replace tomato puree with 2 chopped tomatoes too.
  • I used kashmiri chilli powder to get the bright red color.

Egg Stuffed Spinach Paratha...!!!

Author: Siddhi Shirsat // Category: , ,

This egg stuffed spinach paratha is a very tasty and filling dish. This egg paratha was a common recipe at my place, so i modified it by using spinach paratha dough instead of normal and they turned out to be very tasty .They make a healthy and filling snack or breakfast.

INGREDIENTS:

For Dough:

2 cup wheat flour
1 cup spinach leaves(palak)
1 inch ginger
3-4 green chillis
1/2 cup coriander leaves
2 tea spoon cumin powder
1 tea spoon chilli powder
1 tea spoon corainder powder
salt
oil

For Stuffing:

3 eggs
2 onions chopped
1/2 tea spoon pepper powder
1 tea spoon turmeric powder
salt
butter/oil

METHOD:

For dough grind all the ingredients except flour and oil into a fine paste using little water. Now mix this paste into flour and kned into a soft dough using water and little oil.Keep aside for 30 mins.

Now add salt and turmeric powder to the chopped onions.Beat eggs and add to this mixture and add pepper powder.

Now make balls and roll out thin rotis of it.To make a single paratha roll out two thin rotis of equal size.Heat a tawa and add butter. Now put one roti on it and spread egg mixture on it.Do not add lots of it as it can come out.Fill the whole roti with it leaving 1 inch area around its edge.

Now take the second similar size roti and place it exactly on top of the first one.Press and seal the edges carefully so that mixture do not come out.Let the paratha get cooked. When its done on one side turn it and cook on other side.Add butter in middle.

When its done on both the sides, cut it into pieces and serve with ketchup.

NOTE:Vegetarains can use grated paneer in this paratha instead of egg.Add salt. turmeric and little chat masala and lemon juice to grated panner and use as its stuffing.
This spinach dough can be used to make simple parathas also which taste very good with pickle or curd.

Preparation Time: 20 mins

Baked Chicken

Baked Chicken with Sauteed Vegetables

This is healthy chicken recipe. I loved this a lot..Sometimes we get bored of our normal routine and want to try something new and of course it should be filling..can't get up in the middle of the night. I had bought chicken breast to try out a different dish which I'm planning for ages. I tried this recipe dinner with some mild soup and it was too good. Very less oil and inclusion of favorite veggies made it a instant hit.

I'm not a big fan of adding veggies to non veg dishes. Would normally oppose when MK suggests adding potato into fry items. But will do it only when it is a big crowd. But Bell peppers and Mushrooms are good choices ans made a good combo with the Chicken.
